Bihu also includes the New Year celebrated in Assam in April. In Bihu, the people of Assam celebrate by dancing in the joy of their new crop or the arrival of the seasonal crop. It is a special dish and eats and feeds their family and friends with great fun without any distinction of caste, religion, in the festival, people of Assam do sports like Tekeli Bhonga (pot-breaking) and buffalo fight.
Clean the sesame seeds. Heat a frying-pan or a tawa and lightly roast the seeds. Pour the seeds into a mortar and pound them so as to break the outer shell. This allows the aroma and flavour to be released. Next, slice the jaggery into small chips. Pour the sesame seeds into the jaggery and mix well (like you mix dough) while crushing the jaggery chips with your fingers.
A pai choru, a flat-bottomed earthenware pot or wok, is traditionally used to create the pitha, and one or two bamboo shala (frying chopsticks) are placed on one side to serve as a rack to keep the pitha warm after it has been withdrawn from the direct fire. The pitha will stiffen up and will not crumble as a result of this. The earthenware's slow heat transmission is ideal for constructing the pit.
